Now and later

Dear Feastlings,

One disappointing bit of news is that, as often as not, a bottle of wine that you open up  at the beginning of dinner is only just hitting its stride as the meal- and the bottle- draw to a close.  We in the industry often find that a wine is better later in the day, having been opened several hours earlier, or even a day or two earlier.  This week, we’ve decided to give you the side-by-side: we’ll serve each wine as two samples, one opened just at the beginning of the tasting, and one that’s been opened two days prior.  The difference between the Now and Later versions will be eye-opening.  What’s more, it’s the end of the month tasting, so there’ll be food pairings alongside the wines.  The caveat: these are fancy-pants wines, and they’re priced accordingly.  I dare say this will be the priciest Saturday tasting we’ve had, but I also dare say it’ll be worth it.

This Saturday, February 24, at 2:00 pm, we’ll be pouring four wines that have the potential to open up over an extended period of time, and we’ll be serving the two-days-earlier version of them as well.  Wine, food and time travel.  The tasting, since the wines are a bit spendy, is $60 plus tax and gratuity, but these are wines you’re unlikely to get the opportunity to taste but on rare occasions like this one, unless you treat yourself to a bottle and draw the tasting experience out at home over a couple of days.  If you’d like to join us, call us at (520) 326-9363 and we’ll save you a seat, a glass, a fork and eight tastes of very special wine.
