I was the goat milk hog.

Dear Feastlings,

I love most of our purveyors. Our wine reps are fantastic, and I’ve worked with our rep from Merit Foods, our local broadliner (that means they provide a whole broad spectrum of foods and supplies, as opposed to just produce or seafood or what-have-you) for about thirty years now, I think. Yep. That sounds right. Since Boccata was a restaurant. I can’t speak well of every last one we deal with, but I understand that they’re dealing with the same staffing crises we are, so when a driver shows up at 7:30 on a Saturday night, I know it’s not because he was thumbing through Facebook all afternoon.

I do, however, get frustrated on occasion that our broadliners don’t offer as broad a line as I hope for, so mornings will often find me scouting out Chinese sausage, or green coffee beans, or lamb necks, or whatever ingredient I’ve foolishly added to the menu. Today, I was the guy cleaning Natural Grocers out of goat milk for the chocolate cajeta tart on our menu. So my apologies if it left you high and dry, but it seems goat milk isn’t worth the investment for our suppliers, and before my mailbox is filled with recommendations for various and sundry farmers’ market suppliers, I’ll tell you this: like most small business owners, I don’t have a lot of free time, so if I can just travel a mile and be in and out of the store in less than ten minutes, Meyenberg goat milk will suit me just fine, thanks. And I really like their butter, too. I’ll check out your favorite goat milk supplier on my real day off, just for myself and not for the restaurant when I’m buying gallons at a time.

But remind me that next month, I’m not going to add any dishes to the menu that require trips to various and sundry stores, scattered all over town. It means I’m getting this email done at the literal eleventh hour now, but those of you joining us remotely for today’s wine tasting
