Dear Feastlings,
I wasn’t clear as to how I’ve managed consistently to find myself scrambling to beat the ensuing dinner rush clattering clattering over the keyboard to send out an email likely riddled with typos and run-ons. The question I often get here is how I come up with a new menu each month, the impression being that I have thousands of food ideas dancing in my head like sugar plum fairies, but the truth is that my primary, if not only, motivation for creating each new menu is simply its deadline.
I can try to come up with dishes months in advance, and I may come up with an idea or two that still needs fleshing out, but nothing starts the ideas flowing like the desperate need to produce a finished product, quickly and at the eleventh hour.
Since Mary Ann has been notifying me daily that people have been calling and asking about the Valentine’s Day menu, and since I haven’t been able to post it until I’ve finished writing the February menu, that moment comes only now, and so I’m sharing it with you.
